According to the information that I have, if you grind your own flax seeds (with a coffee/seed grinder), three tablespoons of the ground seeds equals one tablespoon of the oil. The advantage of the seeds would be that you would get 9 grams of fiber per each three tablespoons, so if you were shooting for three tablespoons of oil per day, you would also get a good minimum of fiber. You should *not* cook the seeds into food if you want the advantage of the oil, which would be destroyed by heat. Hi, Flax / Linseed is 18 % by weight omega 3 oil and as 1 tablespoon is about 12 g, you would get a little over 2 g of the omega 3 oil per tablespoon. Daily grinding is the only way as the omega 3 oil in the ground seeds oxidizes very quickly. I keep by unground, organically grown seeds in the freezer. This would not be really necessary would it?? Wouldn't they only oxidize AFTER being ground? I would think they would keep indefinitely in seed form?? Sure the hull of the seed should keep it safe (but everything has limits) and as I have room in my freezer, why not.
