Guest guest Posted September 14, 2003 Report Share Posted September 14, 2003 The Soup that Slims Fast1 bunch scallions, chopped (about 6)1 bunch celery, sliced (about 10 ribs)2 green bell peppers, sliced3 carrots, peeled and sliced1 pkg. (10 oz) fresh mushrooms, sliced6 cups (1/2 head) cabbage, cut into bite-size pieces1 package onion soup mix, like Lipton's1 can (48 oz) vegetable juice, like V-8 (optional)1 cube beef-style or chicken-style bouillon1-1/2 cups brown rice, cookedIn large sauce pot coated with cooking spray, sauté' scallions 3 minutesor until tender. Add celery, peppers, carrots and mushrooms; cook 4minutes more, or until veggies are tender. Stir in cabbage, soup mix, 12cups water (or 8 cups water and vegetable juice) and bouillon cube.Bring to a boil, reduce heat and cover. Simmer soup 2 hours. Add brownrice; cook 5 minutes or until heated through.
