Do I wait until they turn red (I think after the 1st frost) to pick them? 2. How would I dry them? 3. Any ideas of what to do with them fresh or if I dry them? Thanks! Can be used for rose hip syrup (child's drink), gentle remedy for diarrhea, a mild diuretic, reducing thirst, and alleviating gastric inflammation. Guest guest Posted September 3, 2001 Report Share Posted September 3, 2001 You are so fortunate! Our crop north of you in Wyoming hasn't been very good this year due to drought at critical times. I like to eat fresh rose hips raw off the bushes, and spit out the seeds. That means more roses will grow next year. They should be picked when red, but not mushy. Drying on an open screen is best, just like you'd do with elderberries or plums. I used to have a solar food dryer which we made at a workshop in Grand Junction. It wasn't terribly hard to build, but ours was really huge! We dried rose hips in it a few times. You might be able to find a carpenter friend who could build one, and i might be able to dig up plans from somewhere. Rose hips is great for tea. I have known people to bake them into breads occasionally, like a banana bread. They give a sour but pleasant flavor, somewhat similar to cranberries. They are an excellent source of Vitamin C. I think maybe God gave us Rose Hips so people could live in the mountains.
