Guest guest Posted July 23, 2003 Report Share Posted July 23, 2003 Pizza Bread JoAnn Guest Jul 23, 2003 11:46 PDT Flaxseed Pizza Bread ½ cup organic sun-dried tomatoes 2¼ cups whole wheat flour ½ cup light parmesan cheese (organic) 1 tbsp. turbinado sugar ½ cup ground flaxseed 1 tbsp. baking powder(aluminum free) 2 tsp. oregano leaves ½ tsp. salt ¼ tsp. black pepper 1 ¼ cups organic milk or soymilk 2 tbsp. Extra-Virgin Olive oil 1 organic egg 1 small organic tomato, diced ¼ cup diced green pepper 1/3 cup shredded mozzarella cheese (organic) Cover sun-dried tomatoes with boiling water. Let stand for 10 minutes or until softened. Drain and dice. Preheat oven to 350 degrees. In a bowl, combine sun-dried tomatoes, flour, parmesan cheese, sugar, ground flaxseed, baking powder, oregano, salt and pepper. In a separate bowl, whisk together milk, oil and egg. Pour liquid into dry ingredients. Stir just until dry ingredients are moistened. Pour into a well greased 8.5 x 4.5 inch loaf pan. Sprinkle tomatoes, green pepepr and mozzarella cheese on top of batter. Bake 55 to 60 minutes or until wooden pick inserted in center comes out clean. Yields 1 loaf. This recipe can also be used for muffins with the following changes: increase milk to 1 ½ cups and decrease flour to 2 cups. Bake muffins for 25 minutes. I don't really care for Amy's organic pizzas (tastes sort of like glorified cardboard <LOL) so am always looking for new ways to make it myself. I appreciate the fact that it requires no yeast! JoAnn > > JoAnn and All > As I recall, the original pizza dough was from garbanzo bean flour. mjh I believe most of the traditional pizza has tons of transfats included in their recipes, so it is not exactly the type of meal that anyone should eat who is recovering or has recovered from CVD, heart disease or high blood pressure.
