We have the Excalibur that holds nine trays. The main thing ours has that cheaper models don't is a timer and temperature control. Also a nice book on dehydrating came with it. I dehydrate tomatoes to add to soups and such. Much cheaper than the oil soaked gourmet ones in the supermarket. I've also dehydrated our seedless grapes for our own raisins - yummy ) As for loss of nutrients I can't answer that one. Hope this helps.
