Plastic shelving and Dehydrating

While on the subject on dehydrating, I am wondering what you all

feel/think about using even food grade plastic shelving while

dehydrating. I am from the old school of thought where you use only

stainless steel for shelving. I do not really trust the government about

health issues. Someone recently brought this up on the kombucha list,

and I was wondering the same about dehydrating foods which are known to

be very cleansing--are they also cleansing that food grade plastic?? I

can't believe that it won't leach into the foods. What are your

opinions, if I may ask.
