Unfortunately, it's the white potato that rules our plates, instead of the more nutritive " sweet " potato or " yam. " And interestingly, sweet potatoes and yams are not related to white potatoes. In fact, all of the roots labeled " yams " in American supermarkets are actually sweet potatoes. If you're still following along, there is a further distinction. Moist, orange-fleshed varieties are often called " yams, " while drier, yellow-fleshed ones are usually called " sweet potatoes. " Both types are much better for you than white potatoes. Sweet potatoes are packed with nutrients (including carotenoids, copper and fiber) and rank much lower on the glycemic index scale than white potatoes. That means that even carbohydrate-sensitive individuals can include these good carbs in their diets.
