Enjoy:)GINNY'S GARDENEvery year, I have a hard time letting go of my flowers, theyare so beautiful, so I decided to dry by just hanging the flowersupside down until dried and then as they dry, placing them in acontainer. I have dried roses, dahlia's, Lavender, hydrangea's etc.I was surprised with how pretty the small Dahlia's looked whendried. This way, I can still enjoy my garden all winter long. Ialso make potpourri with the dried petals.I also take pictures of my garden at all stages of the blooms, andput them in a small photo album and then I can reminisce whenever I get the urge! Also helps as a visual for planning next yearsgarden. It makes me smile and warms my heart.~Happy Flowers, Ginny MohneyMIRANDA'S CHEESE BALLHere's another cheese ball recipe. The ingredientsfor this one sound a little strange, but it is verygood!Pineapple Cheese Ball1 (8 oz.) pkg. cream cheese, softened1 (8 oz.) can crushed pineapple in juice, well drained1 tbsp. finely chopped green bell pepper (use red forChristmas!)1 tbsp. finely chopped celery1 tbsp. finely chopped onion2/3 c. chopped pecans1/2 tsp. saltDash of hot sauce (opt.)Fold pineapple, bell pepper, celery, onion and 1/3 c.chopped pecans into cream cheese. Add salt and hotsauce. Form mixture into a ball; chill for 1/2 hour.After ball is firm, roll in remaining pecans to cover.Chill cheese ball overnight before serving.~Enjoy, Miranda in HawaiiCHEESECAKELor from Canada sent me this recipe and I had to share---Grandmother's Cheese Cake (Sernik Babci)Dough:1-1/4 cups flour3/4 tsp. baking powder1/4 tsp. salt1/4 cup butter or margarine1 egg3 Tbsp. sour cream1/3 cup confectioners' sugarFilling:6 eggs2 cups confectioners' sugar1 1/2 tsp. vanilla extract1 lb. farmers cheese or ricotta2/3 cup melted butter1-1/2 cups mashed potatoes (not seasoned)(*Save mashed potatoes from the night before)2 tsp. baking powder1/2 tsp. nutmeg1/2 tsp. salt1/4 cup grated orange or lemon peelFor the dough, combine the flour, salt and baking powder in a bowl.Cut in the butter with a fork. Beat egg into the sour cream. Stir intothe flour mixture then stir in the sugar. Knead the dough until wellmixed and smooth. Roll dough on a floured surface into a rectangle.Line a 13x9x2 inch pan with the dough and bring dough part the wayup sides.For the filling, separate 1 egg and reserve the whites, beat remainingyolk and whole eggs with the sugar for 5 minutes at high speed of aelectric mixer. Add the vanilla, beat at high until the mixture is soft.Press cheese through a sieve, blend cheese with butter, add potatoes,baking powder, nutmeg, and salt. Stir in orange peel. Fold into the eggmixture. Turn into prepare crust in pan. Bake at 350 degrees F for about45-55 min. or until set. Cool well before cutting.FRESH GINGER:Here in the Philippines we cook our clams by sautéing them in onionsand ginger and add salt and pepper to taste. Real good.
