Guest guest Posted November 24, 2004 Report Share Posted November 24, 2004 I am sorry but I am more of a lurker than a post-er to the list, primarily because I am very much a learner ... but I have posted this recipe because it is just so simple - it's not one of my own creations, but it is just so easy to make. I am going to try using Crunchy Nut cornflakes next time for a change, and also another time, maybe use some Coco Pops. Cornflake Biscuits Ingredients: 2 cups sifted plain flour 1/2 tsp baking powder 250g butter or margarine 1 cup sugar 2 eggs 1 tsp vanilla essence or flavouring 1 1/2 cups corn flakes Method: Preheat oven to 180 degrees C. Sift together flour and baking powder. Beat butter/margarine and sugar together, until light and fluffy. Add eggs and vanilla, beat well. Add sifted dry ingredients and corn flakes; mix well for about 2 mins. Drop by tablespoon onto ungreased baking sheets. Bake in a moderate oven (180 degrees C) for about 10 minutes or until lightly browned. Be very careful not to overcook the biscuits - that is my normal mistake.
