Pinto Bean Sloppy Joes1/2 Tbs oil1 medium onion, chopped fine1/2 bell pepper, chopped fine16 oz can pinto or red kidney beans, drained and rinsed1/4 cup wheat germ1 cup thick tomato sauce (I mixed a 6-oz can tomato sauce

with enough water to make a cup)1 Tbs soy sauce or tamari1 tsp chili powder (optional)1 tsp paprika1/2 tsp dried basil6 bunsHeat oil--saute onion and bell pepper 3-4 minutes. Addremaining ingredients [not buns, of course] and bring to

a simmer. Mash beans lightly with fork or potato masher.Simmer, loosely covered, 5-7 minutes or til preferredconsistency, stirring occasionally. Serve on buns.-- Diana Gonzalez
