Guest guest Posted January 24, 2006 Report Share Posted January 24, 2006 Jamaican Jerk Sauce Recipe1/2 cup ground allspice berries1/2+ cup packed brown sugar6 to 8 garlic cloves4 to 6 Scotch bonnet peppers1 Tbs ground thyme or 2 Tbs thyme leaves2 bunches escallions (green onions) 1 tsp cinnamon1/2 tsp nutmegSalt and pepper to taste2 Tbs soy sauce to moistenPut everything in a food processor and blend until smooth.You may use allspice berries, if available, but use enough to give the equivalent of 1/2 cup ground. (Allspiceberries and scotch bonnets are key ingredients.) Keep thissauce refrigerated and it will keep forever. Feel free toincrease the hot peppers and garlic.
