Mine never lasts long enough to go bad..... I've had a batch about 6 months before i had used it all up... in the summer I keep it in the refrig after I've strained it... In the winter I have let it sit in the kitchen cabinet... BUT NO I NEVER DID A TEST TO SEE EXACTLY HOW LONG IT TAKES FOR VINEGAR TO GO SOUR... LOL. Some tinctures you make you may only use some and then they sit until needed again... that is where the alcohol is best... Total Tonic for example will last for years and years. Probably decades. I've never kept it around long enough to find out its actual shelf life, and it really should not be a concern.
