HU........The Heat Level of Cayenne Pepper is measured on the Scoville scale in "Heat Units". Two common ground varieties are 30K & 90K Heat Units, (30,000 & 90,000 respectively). The 30K pepper is comparable to the canned "Red Pepper" that you find in at the Supermarket. Just about anyone can tolerate 30k Cayenne. On the other hand, 90K Cayenne is incredibly hot and just sprinkling in can result is an irritating cloud of invisible particles that will cause one to sneeze his head off!

Capsicum annuum is the species so to speak. Herbalcom is great for answering questions.. you can email them and they usually get back by the next day. They have it in crushed and powder form - the powder form you will notice is different heat units.

Cayenne is (to me) better as a tincture with alcohol.. but I believe you can make it with acv (total tonic is acv based)... a tea ??? I don't think I'd like that.. you can take a few drops or more in a swallow of water...
