Hi Wendy,

 

DH stands for Dear Husband or... depending on your mood. For Dandelion coffee:

 

Dandelion "Coffee"This really isn't coffee, but it's an interesting hot drink that's easy to make once you've dug the dandelion roots. Scrub the roots well and trim away broken ends and hair roots. Place in a shallow baking pan and bake at 250 - 275 degrees until lightly browned. Cool and grate, grind or put them in a cloth and crush with a hammer. Pour a cup of boiling water over a scant tablespoon of the crushed root. Let it set for a few minutes, then strain. Add honey, sugar and/or lemon.

Roasting your root for dandelion coffee

 

Selection: It is most efficient to use only the best roots for making coffee. Select the medium to large size roots and these are best before they have become too woody. The tiny stringy roots are more work than they are worth and the older pulpy roots take longer to roast and don't give as nice a finished product. Cleaning: Scrub the root well with a vegetable brush, removing all the dirt and scabby stuff. Roasting: Place the roots on a cookie sheet and put them in a 350 degree oven. After about 1/2 hour a lovely chocolaty smell will begin to emanate from the oven. Give them another five minutes and then check them for readiness. When they are brittle (like well done bacon), they are ready. The narrow parts of the root finish sooner. Break off the ready parts and put the rest back in. Check every 5-10 minutes and remove when done. Crushing: Allow the roasted roots to cool a little and then place the on a dough board or something similar and crush with a rolling pin. Store as you would regular coffee. Enjoy!!

Here's a recipe for a delightful summer beverage. Snow Lion (Iced dandelion coffee) Makes six servings.

 

4T Dandelion coffee 5 Cups Water 4T Honey 3T Heavy cream 1/4 Cup Milk 1/8t Pure Vanilla Extract (optional)

Brew the coffee and transfer to a pitcher. Add the honey and cream first stirring well till honey and cream are dissolved and well mixed. Add milk and vanilla; stir and refrigerate till cool. Serve over ice. Try it, You'll like it!

I know this may have been posted and I have missed it(genuinely) but does anyone know how to make Dandelioncoffee?Wendy(Australia)P.S. pardon my ignorance and silly question, but whatdoes DH stand for? I saw that in some of the poststhats all.

It's supposed to taste best if you dig up the roots, trying to keep them whole--so you do not loose any of the white juice from them. Best to dig them up after the first freeze or so to maintain the most sweetness. Clean the dirt off of them. Then steam the roots. Then roast them slowly.

After you get those roots, don't forget to have a dandelion salad with the

greens! :)
