One of the first to hit the market is a potato vaccine designed to protect against a form of gastroenteritis called Norwalk (caused by seafood) and E-coli. Then there is a banana vaccine. Genetically altered half a banana will protect children from polio, cholera and other diseases. Also on the anvil are malaria and cancer vaccines. In another ten years, if the experiment succeeds, these edible vaccines will be delivered through food. The potatoes, fresh from the greenhouse of Prof. Charles Arntzen at Cornell University in New York, are part of a revolution that is turning bananas, corn, beans, tomatoes and many other crops

into drugs, vaccines and antibiotics. Scientists are currently altering the genetic profile of these plants so that they can grow proteins and antibodies that will fight off or prevent diseases in the humans that eat them. The technology of edible vaccines is relatively simple. A gene is taken from the bacteria or virus and mixed into the genetic make-up of the plant, which develops a ‘foreign’ antigen or protein in response to the presence of a new gene. When the patients eat the genetically engineered fruit or vegetable, their immune system will detect the antigen and produce

antibodies to fight it. In this way, the body would be immunised. Then, when the real virus or bacteria comes along, the immune system can repel it because it already has the antigen to recognise it. These Veggie Vaccines will also not have the animal diseases crossing to human beings. Let us hope that these genetically altered potatoes will not make our skulls grow out of shape or our penises like bananas! Genetically altered chickens, have already made chickens out of men.
