Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 Basil Olive OilIngredients:1 cup packed fresh basil leaves1 cup olive oil, good quality-any typeBlanch the basil leaves for 2 minutes in boiling water Remove and squeeze the leaves dry in a clean towel. Place the leaves and 1/2 of the olive oil in a blender. Process until smooth. Slowly add the remainder of the oil. Pour into a glass jar and steep in the refrigerator for a day for the flavors to blend. You can use this as you would pesto or other herb oil.Green Beans with BasilIngredients:1 pound fresh snap beans, green, yellow or purple, trimmed2 tablespoons butter or margarine1 tablespoon grated lemon zestsalt and freshly ground black pepper1/4 cup fresh basil, finely choppedCook the beans in boiling water for 3-4 minutes until JUSTtender. Drain and set aside. Melt the butter in the same panand add the beans, lemon zest, salt, and pepper. Saute for 5 minutes, until the beans are tender. Remove from heat, toss with basil and serve.Lemon Basil SalsaIngredients:2 pounds ripe, firm tomatoes1 large sweet onion2 cloves garlic3 jalapeno peppers, seeded1 cup packed basil leavesjuice of 2 lemonssalt and freshly ground black pepperoptional: Pinch or two sugarFinely chop the tomatoes, onion, garlic, peppers and1/2 of the basil. Toss in a bowl with the lemon juice,the other half of the basil leaves (chop first). Seasonwith the salt and pepper and sugar. Chill and serve.Potatoes with BasilIngredients:1 1/2 pounds potatoes, peeled1/4 cup olive oil1 small onion, very thinly sliced2 cloves garlic, minced3 tomatoes, seeded and choppedsalt and freshly ground pepper 3 tablespoons fresh, chopped basilFreshly ground Parmesan CheesePreheat the oven to 375 degrees F. Cut the potatoesinto 2 inch pieces. In a baking pan, combine onions, oil, garlic and potatoes. Season with salt and pepper. Bake about 40 minutes, or until the potatoes have browned and became tender. Add the tomatoes, and bake for 10 more minutes. Stir in the fresh basil and top with cheese.
