Do you think, " Ugh, casseroles! That's so 70's! " Casseroles are in crisis these days. We've neglected them because of their fat content and less than gourmet appeal. But there are casseroles that are worthy of our time and can fit into our menus. There are lots of benefits of good, old fashioned casseroles, if you lighten them up a bit. One trick that has always helped me out in a pinch has been to make extra and freeze it. Casseroles are the ideal dish for the freezer as they manage to hold up to the freezer beautifully without losing taste or texture. Casseroles do well being thawed and reheated, although that cannot be said for everything (that twice-cooked flavor on a lot of foods isn't good, which is why we came up with Mega Menu-Mailer and Five for the Freezer!). So why not make one casserole a week as part of your regular weekly menu plan, and double the recipe? Then you will have a stash of casseroles in your freezer for another time. But let's take this frozen casserole concept a step further. A little bit of planning for the future costs you nearly nothing in money and time and allows you to reach out and help someone else. An extra frozen casserole is easy stuff and could be a lifeline to a friend or relative in need. Here's a fabulous recipe (easily doubled!) with friendly freezing tips included: Chicken and Artichoke Casserole Serves 4 5 boneless skinless chicken breast halves -- cut in 1 " strips 2 tablespoons butter 1 tablespoon olive oil 2 cloves garlic - pressed Salt and pepper to taste 1 cup mushrooms -- sliced 1 4-6 ounce jar marinated artichoke hearts - drained 2 tablespoons flour 1 15 ounce can chicken broth Preheat oven to 350 degrees. In a skillet over medium heat, brown chicken lightly in 1 1/2 tablespoons butter, add the garlic and mushrooms, salt and pepper to taste and keep cooking till chicken mixture is smelling very garlicky. Transfer browned chicken strips to a 2 quart baking dish (if you double this recipe, for your extra casserole, use an aluminum pan so you don't have to round up your other casserole dish); arrange artichoke hearts on top. In the skillet, melt remaining butter and olive oil, and add the flour, whisking to blend (no lumps!). Add broth and cook until thickened then pour over chicken mixture. Bake the casserole, uncovered, at 350 degrees for about 30 to 45 minutes. Per Serving: 495 Calories; 14g Fat; 84g Protein; 5g Carbohydrate; 1g Dietary Fiber; 236mg Cholesterol; 560mg Sodium. Exchanges: 0 Grain(Starch); 11 1/2 Lean Meat; 1/2 Vegetable; 2 1/2 Fat. SERVING SUGGESTIONS: Some brown rice, steamed broccoli and a big green salad. After the casserole has totally cooled, carefully place your casserole in a zipper-topped plastic FREEZER bag and remove all air before sealing. Huge 1 1/2 to 2 gallon bags are perfect for this. (IMPORTANT note about freezer bags: this will aid in the casserole tasting fresh. Those bags are designed to take the cold and regular bags are more permeable and will not keep your food as fresh) Next, mark the bag with what you made (Cathy's Cheesy Casserole, for example) and the DATE. Add the heating instructions-like preheat oven to 350 degrees and cook for 35 minutes or until hot and bubbling, etc. Use a Sharpie pen for this task (it's the only pen that will hold up to the freezer without running. To keep your Sharpie from running off with the nearest child, hide your Sharpie in the freezer bag box or you'll never see it again. Remember: this hiding place you will take to your grave-tell no one). To cook the casserole, remove from the freezer the night before and place in the fridge to thaw overnight. By the time cooking time comes, it may not be completely thawed but that's okay. You will most likely need to cook the casserole longer to reheat, but an easy way to do that is give the original cooking time and add the caveat, OR until hot and bubbly. Another key part to a healthy lifestyle is regular exercise. Yeah, I know it's a constant struggle to keep up a routine of exercise! It doesn't have to be torture though! I promise it will be more fun and motivating when you have cute and stylish exercise clothes to replace ugly shirts and baggy sweats! Here are some sassy style tips to get you moving with an exercise routine for your healthy lifestyle! Try wearing layers to help slim your torso. Start with a good quality sport bra so you can exercise without worries. Next, wear a body skimming exercise tank with shelf bra to help minimize jiggles even more. Over the top you can wear a zip-up hoodie (short or long sleeve). Leave the hoodie half-zipped up for a flattering " V " at the neckline. Don't forget a good offense is backed up by a good defense first! You must wear a supportive sports bra-invest in one of these! Nothing is more annoying than your bust bouncing to and fro while you exercise! You can really " go for it " and exercise when you able to move freely! Choose body slimming colors and styles. Look for the perennial body slimming favorite color-BLACK! For slimming styles select those that have vertical lines down the sides of the pants and under the arms of the shirts. Long workout pants will give you the longest line and are the best choice if your legs are heavy. Workout pants, crops and capris should be of a stretch fabric and a dark matte finish (avoid shiny fabrics). A boot-cut with a wide waist band will work for most body types. For workout pants in a cropped length, the best choice is at the lower part of your calf-avoid pants that stop at the widest part of your calf. Answer this question: what are you doing to be more healthy in 2008? ** As I looked around the house (and in the mirror), I was overwhelmed with how badly things had gotten off track. What helped me was I asked myself, " What would it look like if I was doing well? " I would have a glass of water poured, sipping as I got dressed. I'd be showered and dressed....so I did those things. There'd be some veggies cut up for munching (they were in the refrig but not accessible). Alright, I got started on the veggies and put in a load of laundry.....instead of focusing on what was wrong, I asked myself what does doing it right look like. I started with the first thing and progressed, don't look back!! By not looking back, acting on that, RIGHT NOW I can do what needs done.
