Guest guest Posted May 6, 2004 Report Share Posted May 6, 2004 Okay so I made some veggie tacos and they tasted just like the beef tacos! They were sooo awesome. Here is what I did: I got sprouted tortillas and the store but they were moldy, darn it! So I purchased the Arizona Brand whole wheat tortillas.... I chopped up my lettuce, tomato, green onions. I made a small batch of refried beans (organic of course) You know all the usual stuff to make tacos... Then I small diced, like 1/4" dice portabello mushrooms along with onion the same size and sauteed in the pan very well with olive oil, then added my taco seasonings... I did cheat and purchased the "Veggy" brand grated soy cheddar cheese (I love cheese on tacos so made a comprimise) Heated my tortillas and layered everything inside just as you normally would and ooohhh they were so delicious! I had company and they loved them too, didn't even realize they weren't meat until I told them. Anyway wanted to share with you all.. I was so happy to find the sprouted tortillas and then having them moldy the same day I purchased them was a HUGE let down! What is your "filler" for your tacos? I really like the portabello filling, soo darn good! I forgot about the almond cheese, will get that next time! Bummer about the torillas; and there is also store bought almond cheese in cheddar flavor. It really is hard to have a taco without cheese! I use my veggie pattie mix, which is a combo of Mushroom, onion, bell pepper, sprouted garbanzo (chickpea), sprouted wheat or other grain. Sometimes when i dont have all that together i use sprouted sunflower and sprouted almond, chopped up and then tossed into the torilla, then taco toppings. Oh yeah...
