Malinda Those soy meats and other's like it can be gross! I have found portabello mushrooms to be a great beef replacement for tons of recipes. I made "pot roast" one night with carrots, potato, onion, garlic, etc in the oven (basted with olive oil & seasoned) then about 20 minutes before the veggies were done roasting I placed whole, de-stemmed portabello's right on top and finsihed roasting... YUMMY! Always when using whole for roasting, grilling, etc... I place the portabello on it's back and drizzle olive oil all over them and then pre-season.
