Guest guest Posted May 28, 2004 Report Share Posted May 28, 2004 I finally found my recipe for veggie stock, which is a good thing because I need to make more. I like to make a large batch and freeze a large portion of it in ice cube trays. This is great alone, and great as a filler for veggie stew! I take a couple of cubes and slowly heat in a cup, makes a great cup of soup on a cold night. Here it is: 2 tbsp olive oil 2 large ribs of celery, including leaves, cut into one inch pieces 2 carrots, coursely chopped 2 large onion, chopped 2 leaks, chopped 3 green onions 3 large cloves garlic, chopped 1/3 cup chopped parsely, including stems 1/4 cup chopped basil (or 2 tsp dried basil) 1 tsp marjoram 1/2 cup chopped mushrooms 1 zuccini, peeled and sliced 3 cups chopped tomatoes 3 jalepenos chopped 10 cups water 5 whole black peppercorns Heat olive oil in a large dutch oven. Add the celery and the carrots and saute for a minute; then add teh remaining ingredients (except the water and peppercorns) and saute for 5 minutes. Add the water and the peppercorns and bring the mis to a boil. Then lower the heat to a simmer, cover,and cook for 2 hours. Remove the cover and simmer for another 30 minutes. That's what it looks like! Leeks are in all grocery stores... Make sure you clean them very well...they have a lot of dirt in the folds.
