If you specifically ask them to make all beef hot dogs out of a specific portion of beef...with no waste or extra fat... hen you would hope they would follow your direction. Really it depends... I had a hog slaughtered several years ago and they tried to tell me that my pig had no tenderloin!!! LOL I never used them again. I would be very specific when giving directions.
