I wish to thank everybody who replied to my juicing and pulp questions!

Very helpful! Though I'm a newbie, I did feel inspired to experiment with

juicing and had visited the local co-op yesterday with the following recipe

in mind. I began with a concept of a phytonutrient drink based on the

colors of the rainbow but, of course, didn't really know how well (or not!)

the flavors of the various ingredients would harmonize. I couldn't predict

the color or scent, either. But I tried it out today and the results were

much better than I had anticipated though if I had known more about the

combined flavors, I would have picked up some fresh ginger root, too, from

the store and added it in.

 

Rainbow Phytonutrient drink

 

Red - 2 red beets

Orange - 3 large carrots

Yellow - one half teaspoon zest of lemon and squeeze of lemon

Green - 3 large handfuls of fresh spinach

Blue/Indigo - a small handful of blueberries

Violet - One quarter of a purple cabbage

 

I first juiced the blueberries and added the zest, next came the spinach,

followed by the cabbage and beets, and finally, the carrots. The foamy

juice was mauve in color until the addition of the carrots which turned the

whole concoction into a pleasant light gingery-brown hue. Interestingly, I

think that ginger root would have enhanced the combined flavors. I gave my

own goblet an extra squeeze of lemon since I'm a lemonhead. The recipe

yielded three large servings.
