In process of switching offices and setting up new computer in addition to all the other things we dol By now probably someone has explained how to make ghee, for the folks who asked. But I do it differently, so will share anyhow. Simmer unsalted butter. Not boil, but a strong simmer. A white froth of milk solids will form on the top, and after a while will sink to the bottom of the pan, where after a few minutes it will start to brown. If you turn off the heat before this happens, it is difficult to pour off the clarified portion without getting bits of this white goo along with it. But if you wait till the solids just begin to brown, they are a lot denser and will sink to the bottom better. I pour off the clarified portion till I get down to the bottom and staart getting some of the gunk with it. Then I set the pan tipped toward one side and let it cool down some. This makes he goo part even denser, so after a few minuttes the rest of the liquid can be poured off cleanly. If I forget and the pan cools down too much before I get back to it, and the ghee solidifies, I gently heat the pan a bit and then pour. Or yu can pour through a fine mesh metal sieve, but then you have that to clean. Anyway, it is my understanding that the cholesterol goes into the garbage with the milk solids. I was also told this by he head of a company that makes ghee. And some facts someone else here posted about the % of cholesterol in butter vs. ghee certainly supports this. There was hardly any chol. in ghee, though quite a bit in butter. My DH and I eat at least 2 lbs. of ghee a week. His cholesterol is about 128, and mine is 145. We are 57.
