In fact, soybeans should be eaten only after they have been fermented. They are high in phytic acid and containpotent anzyme inhibitors, which can produce serious gastric distress, reduced protein digestion and chronic deficiencies in amino acid uptake. These are not deactivated by ordinary cooking. We also do not recommend commercial soymilk because of this, and because during processing, carcinogens are formed. It is not an easy thing, but any program that recommends anything isolated, whether it is soy or synthetic vitamins or anything, I would question. Those programs are selling the bars, so they aren't going to tell you the downside of eating them, that's for sure. Moderate amounts of tempeh, soy sauce and miso are the best choices if you choose to eay soy, and I believe in making sure you eat kelp and EFAs with it as well. In Japan, soy is generally eaten with fish and seaweed -- how can a whole culture be wrong, LOL?! Debbie deb Look! In Japan- they eat miso and natto and long brewed soy sauce- and traditionally made tofu which is soaked properly- still not the best but not isolated soy protein or isoflavones, either. Soy can cause thyroid problems, too- but the other problems are nutrient blocking- due to the high level of phytates in non fermented soy... tempeh, miso, and traditionally brewed soy sauce are your best bets...
