Down in sunny ol' South Africa [Cape Town to be exact]. The place abounds

with it - otherwise let me know if you want some recipes, as it's absolute

puddle-sticks easy to make at home, and I'll happily oblige. It's quite

yummy!!

OK - here's the quick method recipe. It makes about 550g of goodies.

50g gelatine [vegetarians can substitute agar]

450g sugar

1.25ml [1/4 tspn] citric acid

Rosewater [to taste]

Red food colouring

50g icing sugar

25g cornflour

1. Pour 300ml water into a heavy saucepan, sprinkle gelatine over it, and

leave to soften for 5 minutes.

2. Stir in the sugar and citric acid and heat gently until the sugar has

dissolved. Stir with a wooden spoon.

3. Boil until the temp reaches 116 Celsius [soft ball stage]

4. Remove from heat and leave to stand for 10 minutes.

5. Add rosewater or rose essential oil to taste. [Go slowly with the pure

oil or you may over flavour the batch.

[i use a toothpick to add essential oils or colouring to foods that

need fractions of a drop.]

6. Pour half the mixture into a tin 20x15cm. Add a few drops of red food

colouring to the remaining mixture.

[it should be a gentle pink colour - not screaming vermilion -

unless that's your fancy I guess!]

Pour the pink mixture over the 1st layer.

7. Leave in a cool place for 24 hours.

8. Sift icing sugar and cornflour together, then sprinkle evenly over a

sheet of baking paper.

9. Turn the Turkish delight onto the paper and cut into squares [about

2,5cm in size] with a sharp knife.

10. Toss the squares in the sugar mixture to coat them evenly.

11 Store in a container between layers of baking paper. Keep in a cool

place.

12. Draw a fragrant bath, light the candles, pour a glass of pink bubbly,

put a few squares of Turkish delight on a

fancy platter, hop into the bath and have a Valentine-style bliss

out! Enjoy!
