Great newsletter. I printed it to keep. I have a question about the

Aromatic Barbecue article. It talks about " Flavoring our fire " by using

sprigs of herbs and says to be sure to soak your wood chips and herbs well

before adding them to your hot coals. Can you give me a few details on

this? What do I soak them in? How much would I use? I'm not much of a

cook, but if I have directions I can usually pull it off. Thanks

Hi Nancy,

 

I'm so glad you enjoyed the newsletter! :)

 

You just soak your herb sprigs and wood chips in water - enough to

cover them, and you can soak them for a good amount of time, like an

hour or so even. Basically I put them in a container full of water and

just forget about them while I am preparing the goodies to cook (BTW -

that is the same way I do corn on the cob in the husk). The after you

get the fire lit wait until the coals are no longer flaming but are hot

and smoldering and then toss the wood chips and herbs onto the coals and

then proceed to cook your food :)
