Guest guest Posted September 3, 2003 Report Share Posted September 3, 2003 This recipe will be featured in the upcoming Autumn Edition of A Little Ol'Factory's Newsletter (due out Autumn Equinox) Coconut Prawns 1 lb shelled, deveined and flattened prawns 1 Cup plain breadcrumbs 1 Cup shredded coconut (Not the sweetened kind used for baking) 1 heaping Tbsp flour 2 Tbsp finely ground macadamia nuts (optional) Pinch Hawaiian 'Alea Red Sea Salt - fine Pinch black or white pepper 2 eggs Virgin Coconut Oil Blend breadcrumbs, coconut, flour, nuts, salt and pepper in a bowl. Beat eggs in a separate bowl. Dip prawns in the egg to coat, then dredge in the breadcrumb mixture. Heat virgin coconut oil to hot and fry a few pieces of shrimp at a time until golden. Drain on papertowels. Serve with lime ginger mayonnaise dip (dip recipe will be in the newsletter .
