In Asian countries where raw fresh seafood is in abundance, people marinate the

raw  fish in coconut or palm vinegar, sea salt, garlic, black pepper, onions and

extremely hot red peppers.  This solution kills the moving critters and bacteria

as well.

In Panama we use limes instead of vinegars. It's called Cerviche.

The rest of the ingredients are for taste.
