One thing is, I like to eat fresh papaya for gut problems but they don't keep well, except freezing. So I made an "infusion?" using vodka over small chunks in a jar. I noticed the vodka preserves papaya better than any other method (short periods like a week). But I wonder, does anyone know if the vodka leaches out the papain? Regards.
