Guest guest Posted September 10, 2007 Report Share Posted September 10, 2007 We're not talking rocket science here, so best is if you start small = a tablespoon or so of herb per gallon. Use less if you're going to use several combinations of herbs. You can always add more later, even when the brew is done and then strain when ready to use. Use less = a teaspoon per gallon if you're a little nervous about amounts to begin with. After you've made it the first time, you'll know which direction to go and it won't be "bad" regardless using the above as guidelines. Another herb you can use, but will put you quickly to sleep after only one small glass (= a great one for those with sleep problems) is Valerian, and others in this category are Passion Flower and Hops. One of my all time favorites is Juniper Berries which give the Mead a "piney" taste and smell. These are also great for the Kidneys. For those of you who do take a little wine once in a while, this is by far the healthiest, and absolute cheapest way to get your partying done over a holiday. All commercial alcohols either have sulphites or some other toxins in them, and should be avoided altogether without compromise. Commercial wines all have sulphites and most of the Organic wines do too. Some of your whiskeys actually have chemicals akin to fuel oil in them. Best is always to make your own, and my favorite reason is: There are NO GOVERNMENT TAXES so it is extremely affordable (= downright cheap) while being very simple, and easy to make. Please do not take this to mean I'm advising that everyone start making this MEAD recipe of mine as a cheap way to get high on booze. Alcohol taken to excess is terrible for the Liver, and I'd never advise that. The only time Valorie and I do this sort of thing is in great moderation (once in a blue moon) during a holiday, or for medicinal purposes = almost never for us.
