Tracy,

Dandelion greens are best picked before the flowering bud comes out.

However, if you put a leaf ( even if it tastes bitter ) in a sandwhich ,

instead of lettuce, the bitterness will vanish...:)

Have your kids pick the flowers, take off ALL the green parts and soak

them and simmer them in twice the amount of water as the flowers.Add

the juice of 1/2 a lemon

Drain and make a syrup, ( one part flower water, half part sugar.)

Bring the syrup to a boil, until it has reached the 'thickening' stage.

Can in airtight canning jars ( like for jam and jellies)

It makes a great sunshine syrup.
