Guest guest
Tracy, Dandelion greens are best picked before the flowering bud comes out. However, if you put a leaf ( even if it tastes bitter ) in a sandwhich , instead of lettuce, the bitterness will vanish... Have your kids pick the flowers, take off ALL the green parts and soak them and simmer them in twice the amount of water as the flowers.Add the juice of 1/2 a lemon Drain and make a syrup, ( one part flower water, half part sugar.) Bring the syrup to a boil, until it has reached the 'thickening' stage. Can in airtight canning jars ( like for jam and jellies) It makes a great sunshine syrup.
