Do a Google search on " Dandelion Greens Recipes " to get a bunch of different ideas on how to cook them. I had some with supper last night - I made free range chicken leg quarters braised with onions, garlic, yellow tomatoes, and at the very end tossed in fresh basil, fresh rosemary, chopped spinach and chopped dandelion greens. They were still bitter, but not an overpowering flavor since there was all that other stuff in there. So they went into the yard with a basket and picked a whole bunch of dandelion greens. But they taste yucky. Is there some special time to pick, or something to do to them before eating them? We live on five acres on a gravel road, so we don't get a lot of traffic to cover them with exhaust fumes or anything like that.
