Keep it at room temperature for easy spreading on toast or for use in recipes instead of butter or margarine. Butter is a better choice than margarine but coconut oil is best of all. Our son, Bryan, did research on margarine to find some sources saying it is one molecule away from plastic. Never use margarine ! To stretch butter you can blend it in your blender with Safflower oil in a ratio of one cube to 1/2 cup of oil or 2 cubes of butter to 1 cup of Safflower oil. Safflower oil remains liquid in the fridge. This means you will have "soft spread" butter. I use Coconut Oil. Coconut oil gets very hard in the refrigerator. I have substituted Coconut Oil in many recipes that call for butter or margarine and it works very well in fact very yummy ! The coconut oil does have a sweet, distinctive flavor but it is not strong or overpowering in most recipes. Coconut is non-dairy and therefore does not have "hormones" to unbalance hormones in your body. Again if you want non-dairy and to avoid hormones going into your body that may well unbalance your hormones, apple juice can successfully be substituted for milk in the recipes I've tried. I'm thinking of muffins, pancakes and our famous Rabbit Hole Cafe scones and coffee cake that are sweetened with dates, apples, cinnamon, vanilla and apple juice and have no eggs or dairy. We even made them with sprouted Spelt flour when the Rabbit Hole was open. You would not substitute apple juice for milk or cream if you were making ice cream or a cream sauce for instance to pour over veggies such as peas, broccoli or cauliflower. I wanted to say more about "local, organic farmers" and "local, organic farmer's markets". These can be found on an internet search or ask around. Your local Extension Office and Botanical Garden may be able to connect you up with organic gardening clubs and local farmers. You will likely be both surprised and pleased at what you may well find within 20 miles of your home. Remember to watch for fruiting trees in your travels and if no one is picking the fruit be sure and stop and ask if you can have picking rights. I can honestly say that I've not purchased an orange, a lemon or a grapefruit in Florida during the citrus season. Doc and I have eaten our fill of delicious, free, tree ripened fruit. It doesn't get any better believe me. Even people who think they don't like grapefruits like "tree ripened grapefruit". These are a whole different experience!
