What I mean by a hydrolat is the water produced from the distillation of plant material, either by steam or water and either for essential oil extraction or not - in other words, sometimes hydrolats are made just for the water and the essential oil is not removed. Suzanne Catty has written a really great book on the subject ... Hydrosols: The Next Aromatherapy. I've found them great for anything to do with skin and of course they make fantastic natural perfumes or spritzers.
