AWESOME Cranberry Fruit Bread Cranberry Fruit Bread 12 oz. bag cranberries, chopped 2 c. pecan halves 1 c. candied cherries & Pineapple 1 c. chopped dates 1 c golden raisins Mix together and set aside. beat together: 2 eggs 1/4 cup water 1/4 cup oil 8 oz. frozen orange juice concentrate (UNDILUTED) Add: 3 3/4 cup flour (I use half white, half wheat) 2 c. sugar (raw sugar is nice....) 1 T. baking powder 1 tsp. baking soda 1/4 tsp. salt Mix dry ingredients into wet ingredients. Fold in cranberry/fruit/nut mixture. (Yes, it seems like ALOT of fruit and nuts, but it works!) Spoon into 3 greatsed 9x5 loaf pans. Bake at 350 for 60-645 minutes until toothpick comes out clean. I also love this as muffins, and, of course, feel free to substitute your favorite nuts & dried fruits at will, but the fresh cranberries are essential. I just cut them in half (instead of chopping) because I love the big bites of tart fresh cranberry. -maggie prairielandherbs.com
