OT - Almond Roca Recipe wanted

The easiest recipe:

Line a 9x13 pan (like a jelly roll pan) with aluminum foil

cover with a single layer of salted saltine crackers

In a medium sized pot boil the following for 3 minute:

1 cup butter

1 cup packed brown sugar

Pour over crackers and bake at 400 degrees for 6 minutes...

Scatter 1 package milk or dark chocolate chips over top of hot crackers,

spread if necessary as they melt...

Sprinkle 1/2 c or so chopped nuts (almonds if you want almond roca) over

melted chocolate.

Allow to cool and break apart... Store in airtight container.

 

Are these decadent enough for you??? :-)))))

Soda crackers :-) My hubby always calls them saltines :-) But then he

Saltines, soda crackers --tomato, tomotos. LOL

I'm just surprised about using them -- but why not. We moved to the mountains

this summer and hi altitude baking and candy making has me puzzled. I have a hi

alt. cook book and that has given me come help, but it is different.

Thanks for the rx, I'll let you know how it turns out.

This is a great recipe. We call it " Pig out candy " because you just can't stop

eating it. I have never had almond Roca but this recipe reminds me of Skor

candy bars. It is an easy recipe and not at all time consuming. Kathy in Ohio

Hi Rita,

 

Almond Roca is one of my favorite candies (just finished off a box

last week that my sister was so kind to bring to me as a hostess gift

--so happy she remembers my favorites. Now, I gotta go back and tell

her that I really appreciate her remembering those little things!)

 

Anyway, I wanted an authentic-as-close-as-possible recipe and I think

this one is it. I will splurge on excellent butter for this recipe

and 12 oz of the best chocolate...

 

ALMOND ROCA

 

1 lb. butter - no substitutes

1 c. sugar

1 c. brown sugar

6 oz. almonds, coarsely chopped

12 oz. chocolate chips

Walnuts, very finely chopped

 

Melt butter over medium heat. Add sugars to melted butter. Stir

constantly until mixture reaches hard crack stage. Remove from heat.

Immediately add almonds and pour into lipped buttered cookie sheet.

 

Spread 6 ounce chocolate chips on top of mixture with spatula as

they melt. Sprinkle with walnuts. Cool in refrigerator. Turn onto

waxed paper. Melt remaining chips and pour on 2nd side of the almond

roca. Sprinkle with remaining walnuts. When cooled break into chunks.

I really mush those finely ground walnuts into the chocolate and

really use a lot, just like the real Almond Roca.

Hi Shelley

 

Just wanted you to know I have never tasted Almond Roca before.

So I really do not know what it is suppose to taste like.

So I can honestly say that my family loved your recipe and I am to

make more.... with it being so easy....I will.

Hi Shelly...thanks for the yummy 'Roca ' recipe. I made it yesterday and

it's so easy.

 

Don't know how much my hips will appreciate it though :-))

 

I hope that you and all in this group have a terrific holiday and for us in

Australia I hope it's not too hot...last week it was 42.5C (107.6F) for

several days and it certainly makes the idea of cooked Christmas dinners

pretty unattractive.
