RE: OT Chicken Fingers

We're going on 26 years now thanks to Fried Chicken. I don't think

that they had Chicken Fingers back 26 plus years ago where I live. Fried

chicken and good beef brisket that melts in your mouth are what my husband

likes to eat best for meat. Make some good old-fashion potatoe salad and

barbeque beans and you're ready to set down and enjoy. Up until Jill's email

I had not thought about using self-rising flour but I think I am going to

try that next time I make chicken fingers or even better yet, good old

catfish nuggets. Makes me hungry sitting here writing about it. ;-D

Next time you're having this for dinner, can I come ???? Can't tell ya how long

Sorry, forgot to sign that ! Need more coffee this morning. The past few days

have been rough. Had to put down one of our dogs late Wed night. Poor little

guy had kidney problems. One of our other dogs died in her sleep and we found

her in the morning on the 12 of Dec. She was an old dog and we knew that this

would be her last winter. Max, our rat terrier, was Sasha's best buddy since

they were always in the house and the other 2 dogs are outside dogs. It seemed

that Max was starting to get better since being on his medicine but gave up when

Sasha passed away.

Dear Paula,

If you are ever in Texas, contact me and I will fix you the best

fried catfish that you have had in years. Catfish is a good old Southern

delicacy that you have to love to enjoy it. It is easy to fix but getting

the best catfish can be the problem. In fact I made catfish yesterday for my

son. He said that he wanted his fried catfish fix before returning North to

Annapolis and the Naval Academy. Obviously I found something else good to

bring him home when he is allowed leave. ;-D

OK I'm inviting myself. Use to live in West Texas and stand in line at cat fish

fries.

Dear Rita & Paula,

We'll have to work out a virtual dinner party if you can't come

here. The menu will be Southern Fried Catfish, Home-made French Fries,

Black-eyed peas, Cornbread, Pecan (pecon & not peCan pie), coleslaw (two

types one made with garlic/sour/tart & one made with mayo with a little

sugar added to make it sweet), green tomatoe relish, onions, pickles & other

condiments, iced tea made with rose syrup to sweeten it just enough, and

some homemade biscuits for those that don't eat cornbread. How does that

sound for a good dinner? Hey, Butch, how about joining us, too? You can

bring the sippin' drinks since you're from the South also.

The tip to making good fried anything is in the batter. If the

batter isn't right, then the catfish or chicken will not taste right. It

takes years for a good cook to come up with just the right recipe, and then,

try to get that cook to share her recipe with you - good luck! It took me 25

years to get my mother to tell me how to make shrimp gumbo like my dad used

to make it. It was a couple of ingredients that had to be fried before

putting into the gumbo mix. She had just accidentally forgot to tell me how

to do it right. I just laughed because I thought about how good cooks in

anything protect their best recipe. Now I can also make good gumbo. Making

Catfish or Chicken batter is much the same. IT TAKES YEARS OF PRACTICE &

many, many mistakes. Rmember the best way to cook either of these is in a

good, old-fashioned, iron skillet that has been around and seasoned for at

least 50 years. When my mom gave up her house, I got the iron skillets

because I was the girl. I've notice that my brother has been looking with a

lot of lust in his eyes over the past few years at my skillets. I figure

that I will give him one of my skillets one of these days in the far,

distance future. There have been family feuds over who gets the iron

skillets in some families when the head cook-in-charge passes. Marilyn

Swartz's A SOUTHERN BELLE PRIMER, describes this phenomona as well as

describes a lot of other Southern habits that will make you just laugh &

laugh & laugh.

sometime so that we all can meet up and visit or get together at the next

NAHA Conference to be held in September, 2005 in Denver, Colorado. It would

be great to meet everyone and finally have our catfish dinner. I can bring

the catfish and batter. Someone else can bring something else and so on. We

Okay Paula, I give up ! What is this chicken fingers thingy ? I've been off

the computer and must have missed it all. Just got up and running again. Have

the new XP now and I really like it. Okay, is this a new recipe or something ?

If so, I would like to see it and maybe even get the chance to try it ? LOL.
