Guest guest Posted February 18, 2005 Report Share Posted February 18, 2005 Morning all, Now that the main chaos of spring/summer (in the southern hemisphere) is over and you have time on your hands may I offer a suggestion for the winter panic. Most stone fruit is on its way out and fruit markets are selling them down (bananas, grapes and apples as well). What I have just finished doing with 2 trays of peaches, nectarines and plums that I got for $8 is cutting them in eights and putting them on my drying racks to dry out for winter usage. No drying racks? Easy! Just get some fly-screen mesh (not the metal ones, silly) and some masking tape. Empty out the fruit from the box and tape the flyscreen over the open side of the box. Instant drying rack! Cut your fruit up as small as you would like - small = faster drying. I would suggest that you look at paper-dry as the end result. No water, no mold. When they are nice and dry put into jars and seal tight and put into a dark spot or cool cupboard. To reconstitute bring some water to the boil and pop in the fruit. Turn off the stove and when the fruit is soft enough you can feed it to your animals, furred, feathered or human. As an adult theme try this. Take about 2 cups of sugar and one of water, bring to the boil while stirring to ensure that all the sugar is disolved. Add 1/2 litre of fruit or more, but not too much more. Simmer until the fruit is tender scoop into hot sterilised jars so that the fruit comes to the top of the jar and the sugar syrup is half-way up. Top up with brandy. Do it now for winter warmth or Christmas presents. Add a note to the lable. Do not drive after 3 pieces of fruit! Now don't waste those drying racks. Get some leafy vegetables or herbs and keep going. Regards Merinda If all else fails, cry! Find local movie times and trailers on Movies.
