Goat milk ice cream

Here is the recipe that was submitted to a magazine Countryside by a reader:

Creamy Homemade Ice Cream

1/3 cup cold water

1 Tbsp unflavored gelatin

2/3 cup sugar

2 Tbsp cornstarch

6 cups milk, divided goat milk or cow milk)

1/4 cup light corn syrup

1 egg

1 Tbsp vanilla extract (or more to taste, if you're making vanilla ice cream

& not one of the variations)

Sprinkle gelatin on water, set aside. In a large saucepan mix sugar &

cornstarch well, stir in 3 1/2 cups milk & the corn syrup. Bring to a boil,

stirring constantly. Remove from heat. Beat egg, stir in 1/2 cup milk, & add

to hot mixture while stirring briskly. Return to heat. Beat 2 minutes,

stirring constantly. Remove from heat. Immediately stir in gelatin until

dissolved. Stir in vanilla & remaining 2 cups milk. Cook; chill before

freezing

if possible. Freeze in a 2 qt. freezer according to to manufacturers

directions.

Variations:

Chocolate Ice Cream: In the 3 1/2 cups milk called for in the first

steps of the recipe, heat 1 cup of it separately, add 3 Tbsp each of sugar &

baking cocoa, stir to dissolve, then add it to the remaining 2 1/2 cups milk &

continue as directed.

Coffee: 2 Tbsp plus 2 tsp. instant coffee granules dissolved in a

little hot water; add along with vanilla.

Peach: 1 pint crushed fresh/frozen peaches & 1/2 tsp. almond flavoring.

Chocolate Mint: Add about 1 1/2 tsp. peppermint extract (or to taste)

to chocolate ice cream.
