First we have our Madagascar Bourbon Vanilla Beans.

Madagascar produces more than 60% of the world's vanilla and where these

Bourbon vanilla beans come from. Vanilla is a flavoring popular since

pre-Columbian times, when the Aztecs used it in making chocolate. The

first

use of vanilla dates back to Mexico, where the Aztecs used it to create

a

drink called Xoco-lall, made from cocoa and vanilla beans. Today,

vanilla

beans from Madagascar are the gold standard to which all others are

compared.

 

If correctly stored, vanilla beans can be kept for 1 to 2 years. The

best

to store them is in an airtight container in a cool, dark place along

with

your other spices, but be sure to place it far from your oven.

 

To use a vanilla bean, you would slice it open lengthwise with a knife

and

scrape the seeds into the liquid mixture to be flavored, add also the

bean.

Infuse for at least 10 minutes. Remove the bean at the end when your

preparation is ready, the tiny black seeds will remain.

These vanilla beans are 15cm long and have a high vanillin content of

3.2%

which is perfect to make vanilla extract. To make vanilla extract, take

24

grams of vanilla beans with 8oz of 80 proof alcohol. Vodka is

recommended

so as not to corrupt the vanilla flavor. These beans are not as oily as

the

Prime or Gourmet, which makes them perfect for extracts and pastes.

Madagascar Prime Bourbon Vanilla Beans Super Long:

These Grade A Vanilla planifolia beans from Madagascar are wonderfully

fragrant, plump, oily, very pliable (I can wrap them around my fingers

and

tie them into a bow), and on average about 20 cm long (some longer).

They

are not third party certified organic, but they are grown without any

synthetic chemicals - they are what I call - Traditionally Organic

(grown on

land that has never had a synthetic chemical applied to it or its flora

:)

One of the main flavor components in Bourbon Vanilla is vanillin, which

imparts the bean with its distinctive vanilla flavor.

Madagascar Gourmet Bourbon Vanilla Beans Long:

These are just as wonderful as the Prime although they are slightly more

oilier and more fragrant, they are 15cm long and are the same price

as the prime. The Gourmet and Prime vanilla beans are perfect to use in

baking, and also to be added with your coffee beans to make your own

vanilla

coffee! Also, they would make great gifts for family and friends! The

oilier beans would be great to use in oil infusions for bath products.

Tahitian Vanilla Beans from Papua New Guinea

Another variety of vanilla is the vanilla tahitensis bean, primarily

found

on the tropical Island of Tahiti, as its name implies. Vanilla

tahitensis

beans are now being grown in significant production quantities in Papua

New

Guinea which is where ours come from. These wonderful beans are low in

vanillin content but high in heliotropin, a flavor component that

gourmet

chefs prize for the fragrant, somewhat fruity flavor it imparts to

pastries.

These beans are fatter than the Bourbon Vanilla Beans but have a

different

fragrance than the Madagascar Beans.

 

Tahitian Vanilla Beans Extract Grade:

The extract grade beans are 17-19cm long and the formula for making

vanilla

extract is the same as the Madagascar Bourbon Vanilla Beans.

Tahitian Prime/Gourmet Vanilla Beans

These luscious beans are 19+cm long and are fat,oily and smell

fantastic!!

They are quite lovely and very different in scent than the Madagascar

Bourbon Vanilla Beans. These would be quite fun to play with and infuse

and

would be delicious in coffees and cakes as well! Also, in oil

infusions,

you could have two different kinds of product lines since the fragrances

are

Red Raspberry Seed Oil has the potential to improve almost any health

Yikes! I forgot about all this with the Hurricane and my mother's

birthday blowout (I think those cheese biscquits at Red Lobster have

the ability to give you a drudgy hangover from carb overload). Going
