A friend of mine made this delicious mint dresssing one time....he is a good cook doesn't cook with exact amounts just pinches of this or shovels of that;). Are there any good books out there with directions for these types of healthy dressings? I am on digest so will not be able to respond right away. They have recipes in several of their sections. Here is my Man in the Moon Salad Dressing, named for the neat bottle I keep it in. It is not measured either, and varies depending on what herbs are in the garden at the time. Put in the blender: 1/2 cup lemon juice, Balsalmic vinegar (white makes a prettier dressing), OR apple cider vinegar 1 cup olive oil 1 to 4 garlic cloves, depending on how much you like 1/2 cup coarsely chopped parsley, Italian flat leaf is my choice sprigs of thyme, lemon balm, oregano, sage, summer savory, rosemary, lavender, or whatever amuses you (my choice is often thyme, oregano and lemon balm) Blend until it is all smooth. Taste and add up to 1/4 cup water if needed. Add salt and pepper if you like. You can also add cayenne pepper, if your salad will be improved by it. (like a steamed broccoli, red onion and green pepper salad). It also makes a great marinade for meat, fish or chicken. Drizzle it over toasted French bread to go with soups or stews.
