glass cookware for tonic herbs?

i was reading in ron teegarten last night his recommendation for glass or

ceramic cookware rather than metal for tonic herbs. i've always used

stainless and felt it was adequate. do anyone have facts showing otherwise?

 

he also recommends a special ginseng cooker, something like a double boiler

for tonics. does anyone have facts showing improved efficacy with these

types of cookers?

Hi Kath, stainless steel is ok, but I wouldn't make a habit of it. Stainless

steel is relatively inert chemically, but it does react. Double boilers are

certainly what you want to use if you are paying any kind of high price for

tonics.

Oh, and as far as the facts for stainless steel, you can look its reactivity

up. But if I were you, I wouldn't take the chance.

The Ninja way is to put the herbs in a mason jar. You put the jar in a pan

of water and boil it. The cover of the jar is loosely closed, so there is

pressure, but also some steam is released.

You boil the herbs for an hour, pour the water off, and boil again. That's

what my bukinkan teacher taught me. So basically, that's glass.

Kath,

I'm not sure about the stainless steel...

but from experience, Ginseng and Ling zhi tastes totally different..

much sweeter and richer when cooked with a double boiler for a couple hours.
