>To be honest, I think the elimination of

hydrogenated fat and excess sweets,

moderation with animal products and the consumption

of abundant veggies, however this is accomplished, are

the keys to goodnutrition.

I agree that all the above is true. I also believe that a vital

component of good nutrition is consuming organically grown food. The

life force, nutrients, and ecological history are pitifully lacking in

non-organic food. Being concious of the conditions under which your food

was grown, how it was prepared, and how it is consumed (i.e. quietly

sitting, chewing, and relaxing) are key factors in properly nourishing

the physical body.

I like to eat out too. The unfortunate thing is that I have yet to

discover a restaurant that offers varied organic selections. I have

found that even the restaurants that are somewhat " health concious " cook

with oodles of vegetable oil. Even if the food is organic, would the

cooks prepare the food in a relaxed and good-intensioned way? For me,

the frustration, hurry, and anxiety generated by many restaurant cooks

carries a definite qi which subtly permeates the food which they prepare

and I consume.

I believe making that psychological connection with one's own food while

preparing it, draws one closer to the substance which will ultimately

become one's flesh and bones. I think this is an important element in

establishing self-awareness, which I believe to be vital in culivating

health.

Please understand that I agree that eating a plate of vegetables at a

restaurant is far superior to cramming down 5 microwaved hot dogs covered

with processed cheese at home. My point is that once we recognize this,

it can be taken a step further. (one could, at least, bless the hot dogs

;)
