They are designed specifically for cooking Chinese herbs, and allow temp and pressure controlled cooking of about 30 large packs at a time. The cooking machines are typically attached to a packing machine that dispenses the decoction in little vacuum-sealed heat-resistant plastic pouches. It allows for ease of cooking, storage, and portability but it provides the benefits of raw decoctions. Nice technology. These machines were originally from Korea but a few Chinese companies make them as well. Typically it is just different companies assembling the same root parts. They are now very popular in Chinese pharmacies in the PRC, and have a widespread presence in Taiwan, Korea, and the US Korean community. Also, I know that the Zion Korean supermarket in San Diego has a bunch of nice glass machines on display (for southern Cal folks who want to see the machines in person).
