infusing herbs in oil/alcohol/water

Hey folks,

 

A recipe I've been interested in involves infusing herbs in a mix of

olive oil and white wine... you simmer it until the wine evaporates.

 

Has anyone here done anything like that? I'd be worried about not

getting all of the moisture out and ending up with an oil that would

grow nasties sooner or later.

 

I'm also not all that interested in simmering an oil... do you think

this would work with jojoba? My impression is that it's ok to heat it

a bit more than oils. I wonder how it would work out with the wine

evaporation process.

 

Any insights/help would be appreciated!
