Its more economical .. you can load more into the still .. and there is less water to deal with .. plus few distilleries can keep up with the harvest. This generally pertains to leaf, root and bark aromatics. I know of no blossoms that are distilled dry. Rose Blossoms must be distilled immediately .. they will ferment in a matter of hours.
