Drying Fruits and Flowers Despite Humidity?

Hey folks,

 

I got really into drying fruits and flowers when I lived in Colorado.

Living in a climate with low humidity made it so easy to do there it was

like using a calculator during an adding test ;) Example: In CO I could

leave a lemon on the counter and in less than 2 weeks it would be a rock

hard hollow ball!

 

Now I live in a swamp, and everything wants to turn to mold, even the

stuff that was bone dry for half a decade or more *lol* That same lemon

left on the counter here would be a mushy green powdery blob! ;-p

 

Does anyone residing a humid place have any tips for me on drying fruits

and flowers (and keeping them dry) while immersed in a bowl of hot pea

soup ~ oh wait, that's not soup, its just the air ;) ?

 

I'm thinking I will have to use a desiccant of some sort - like the

silica gel packets one gets when buying shoes .. but I wanted to see if

anyone has any practical experience tips they'd be willing to share :)
