They were chopped up fresh and tinctured in organic Apple Cider Vinegar. At the bottom of the jar sits a layer of white sugary stuff. That is partly Inulin, a complex sugar with a low glycemic index that stimulates the growth of beneficial bacteria. It is to a dandelion what a store of fat is to a bear, so you won't find it in spring-dug roots. Good stuff, so before using any tincture we shake the jar. Put about an ounce in a mug, add some honey and top it up with hot water. Not bad tasting at all, and there is the health benefits of the ACV as a bonus. I wish I had made more. Many herbalists have extolled the virtues of Dandelion. My favourite is the dandelion chapter in Susun S. Weed's book " Healing Wise. " We will know our society starts to approach sanity when dandelions are honoured instead of eradicated with poisons. I get those soft surgical brushes from Lee Valley, they are great. With dandelion, since the plant material is so abundant, you can afford to be ruthless and chop away the side roots, so you just have one big root to clean. Where do you live? There is no more digging for this woman till spring. I am kicking myself for not making more.
