A re-post from when your email went bonkers!

Hi Chris,

I have a couple of questions about your recipe for chocolate orange

truffles, which sounds amazing! How many does it make? And do you think

if I substitute whole milk creamline yogurt for the heavy cream it would

work?

Thanks!

Hi Vickie,

You can see it on Aromatic Sage mag ...

http://aromaticsage.com/mom1.htm

And Debra .. it makes about 30 truffles .... I have no idea about the

yogurt - the cream is warmed and used to melt the chocolate somewhat, so

maybe if you melted the chocolate on its own first and mixed din the

cream yogurt stuff .. You'll have to let ME know how it works out if you

try it! :)

  • 2 weeks later...

OK, Chris . . .

I tried it with the yogurt and they are AMAZING! What a great recipe,

thank you!

I did just what you said and melted the chocolate first (and after I got

past the really terrible advice of microwaving the chocolate -- no

thanks to my Mum! -- and my dad saved it by telling me how to fake a

double boiler and un-seize my seized chocolate!) with the grand marnier

and then whisked in the organic whole milk creamline plain yogurt and it

turned into a perfect ganache. Now my next kitchen gadget that I buy

will be a melon baller, b/c it took forever to roll the truffles by

hand! :-)

Thanks again,

Debbie
