We buy them here in Turkey pretty cheap but they are kinda costly in the USA .. so I'll raise my own. Prior to this trip to Turkey I raised Brittanys and had a pen of Pharoh Quail for training purposes .. the birds would lay year around when I put a light bulb in their house in the winter. Anyhow .. far as I know they're much lower in cholesterol than even chicken eggs and they are great boiled. We often have them for breakfast with cavier and hot buttered toast. :-) Cholesterol is not the reason I prefer them .. my cholesterol has never been below 300 in my entire life .. same went for my mother. She died in mid 80s but not from any illness related to cholesterol. Both she and I could have eaten grass and still high a high level of cholesterol because our bodies produced it regardless of what we ate.
